I love this time of year because you can smell pumpkin in just about every store you walk into. It makes me want to pull out those popular pumpkin recipes that I have collected over the years. One cup of cooked pumpkin has 245% of the recommended daily intake (RDI) of vitamin A, 3 grams of fiber, 12 grams of carbs, 2 grams of protein, and only 49 calories!
