Super Healthy and Kid-Friendly Taco Soup for your Instant Pot or Slow Cooker

Need something quick? I got you covered on this one! Print this one out and slap it on your frig if you have a busy life right now. You could even take a black sharpie and write LIFE SAVING RECIPE on the top. LOL!

It’s the perfect go-to recipe when you are stuck at work late or ball practice runs a bit longer. Or how about this one… you planned on swinging by the grocery store but that didn’t happen… yep! … been there done that… dozens of times! Or if find yourself up all night with the baby or a sick kid and you can’t even write a complete sentence or do simple math. This is your life saving, go-to recipe!

It only takes 10 minutes to whip up and is ready in 20! BAM!

INGREDIENTS

Soup

  • 1 1/2 Tbsps avocado or coconut oil
  • 1 large yellow onion diced
  • 4 red, yellow, or orange bell peppers diced
  • 2 pounds ground beef
  • 2-3 tablespoons chili powder depending on how spicy you want it
  • 2 tablespoons cumin
  • 2 teaspoons sea salt (or more to taste)
  • 2 teaspoons black pepper
  • 1 teaspoon paprika
  • 1 teaspoon cinnamon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/8 – 1/4 teaspoon cayenne pepper depending on how spicy you want it
  • 28 ounces can crushed tomatoes
  • 14 oz can diced tomatoes
  • 24 ounces chicken broth or bone broth
  • 5 ounce can unsweetened coconut milk (I like to add a 14oz can)
  • 4  ounces diced green chiles (have more for each person to add when serving if desired)
  • 4-8 oz Heavy Whipping Cream (if desired for extra creaminess)

INSTRUCTIONS

Slow Cooker

  1. Add oil in a large sauté pan over medium heat. Add the onions and diced bell peppers and sauté until soft and tender.
  2. Add the ground beef and stir until is is cooked through and no longer pink. Drain the beef, if desired. Transfer all to your slow cooker. Turn on low.
  3. Add all of the spices and stir well.
  4. Add diced and crushed tomatoes, broth, coconut milk and green chiles and stir until well combined.
  5. Cover and cook on low for about 8 hours.
  6. Add heavy whipping cream, if desired, and stir well & serve

Instant Pot

  1. Turn your Instant Pot on and select the “Sauté” function. Add oil to your Instant Pot. Add the onions and bell peppers and sauté until soft and tender.
  2. Add the ground beef and stir until is cooked through and no longer pink. Drain the beef if desired and put it back in the Instant Pot.
  3. Add all of the spices and stir well.
  4. Add diced and crushed tomatoes, broth, coconut milk and green chiles and stir until well combined.
  5. Seal the Instant Pot lid and select the “Soup” function. Then change the cooking time to 25 minutes.
  6. Once the soup is finished, do a Quick Release. Once the pressure has all been released (about 3 min), open the lid, Add heavy whipping cream, if desired, and stir well and serve, and add any or all of the toppings listed. Enjoy!
